all skin and bone. Mix with white sauce and season. Add 2 stiffly-whipped egg whites, folding them lightly in but not beating the mixture. Have some freshly-made, well-whipped mashed potatoes ready. Place the prepared fish in a buttered mould or tin and cover with the potatoes, which must be lightly piled on in "rocks". Sprinkle sparingly with breadcrumbs, dot with butter and bake for 20 minutes or - until brown on top. Serve hot.

Lemon Delight - 2oz. butter; 4oz. castor sugar; loz. plain flour; 1 lemon; 2 eggs; 4 pint of milk. Cream butter and sugar together. Stir in flour and grated lemon rind and juice. Beat egg yolks with milk and add to mixture. Pour into a well-greased fire-proof dish, then add stiffly-beaten egg whites gently. Stand dish in a tin of hot water and cook in a moderately hot oven, Regulo 5, 375o F., for 45 minutes.
